  •   Tuesday evening was only El Cancun’s third day in business, and manager/co-owner Agustin Bermudez was dealing with a constant stream of customers in and out of the new Mexican restaurant in Redwood Falls. El Cancun is family-owned, with Bermudez’s relatives owning six other restaurants in Iowa, Nebraska, Missouri, Kansas, and Oklahoma. “My sister owns four, and my brother owns a few,” Bermudez said. “I heard about Redwood Falls from a friend. He said there was no Mexican restaurant here,” said Bermudez earlier on Tuesday, taking a break between the lunch and dinner crowds. Bermudez visited Redwood Falls last December to investigate his friend’s tip. “I liked the location, and the lease on this building was very good,” he said. El Cancun’s first day in official business was Saturday, and the parking lot has been full for the lunch and dinner crowds every night since.  Bermudez said the first night went very smoothly for the six full-time and two part-time employees. Even so, he emphasized El Cancun is still a work-in-progress. “We expect to get our liquor license in two weeks,” Bermudez said, adding, “This is a family restaurant — some families don’t like bringing their children to bars. “We were planning on opening a month ago, but we got behind,” he said, saying the remodeling inside and out is still going on. He pointed out the new interior walls could be moved if they want to expand later.
